Characteristics: White to off-white crystalline granules, odorless with a slightly bitter taste. It is poorly soluble in water but slightly soluble in cottonseed oil, peanut oil, and lard. Propyl gallate is relatively stable; however, it reacts with metal ions such as copper and iron, causing a color change to purple or dark green.
